What is the difference between dehydration and freeze drying?

There are many differences between the two but the most notable is that; freeze-dried foods retain the vast majority of the vitamins and minerals found in their original state. Freeze-dried food retains its nutrition because of the “cold, vacuum” process that is used to extract the water. Whereas, the nutritional value of dehydrated food is generally around 60% of equivalent fresh food. This loss is largely due to the heat used during dehydration which breaks down the food’s vitamins and minerals.

What items work and which ones don't?

Out of everything that I have tried so far I have found that items with high oil or fat content don't work. Also; chocolate, certain gummies, and peanut butter.

Does it change the flavor of the food?

Typically no it doesn't. The only time it really changes the flavor is in the Jolly Ranchers. Which it seems to intensify the flavor.

How long does the food last?

The food that is in Mylar bags with oxygenators can last any where between 15 and 25 years if stored in a cool and dry location.
